Holiday Coverage (UP) With Thanksgiving just around the corner, it's time to get out the oven mitts and get ready to serve up some holiday goodies for friends, neighbors and family. Monday's feature is focused exclusively on the oven, the heart of every loving home, and the glorious bounty that comes from it's fiery womb which feeds our stomachs and washes away our failed dreams. Everyone loves Pumpkin Bars!
SIMPLE PUMPKIN BAR RECIPE[edit]
Ingredients
Bars:
* 10 eggs * 2/3 cup granulated sugar * 3 cups vegetable oil * 8-ounce can pumpkin * 1 cup sifted all-purpose flour * 5 teaspoons baking powder * 1 teaspoon ground cinnamon * 1 teaspoon salt * 1 teaspoon baking soda
Icing:
* 16-ounce package cream cheese, softened * 5 cups butter or margarine, softened * 1 cup sifted confectioners' sugar * 1 cup vanilla extract
Directions
Preheat the oven to 500 degrees F.
Using a mixer at moderate speed, combine the eggs, sugar, oil and pumpkin until viscous and oozing. Dump the flour, baking powder, cinnamon, salt and baking soda into this gelatinous mass. Mix at low speed until thoroughly combined and the batter is smooth and pourable. Drain the batter into a greased 13 by 10-inch baking pan. Bake for 30 minutes. Let cool completely before frosting. Cut into bars.
To make icing: Combine the cream cheese and butter in a medium bowl and mix until smooth. Add the sugar and mix at low speed until combined. Pour in the vanilla and mix again. Slather on cooled pumpkin bars.
